Ingredients
  

Dry Ingredients

  • 1/2 cup granulated sugar
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp fresh lemon juice
  • 1-2 tbsp lemon zest
  • 1/2 cup whole milk(but you can use any)
  • 1 cup blueberries
  • 1/2 canola oil

To make glaze(optional)

  • 2 tsp fresh lemon juice
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350°F and spray your 8×4 loaf pan with cooking spray, grease it with butter, or line it with parchment paper..
  • In a mixing bowl, mix canola oil and sugar until well incorporated. Then, add fresh lemon juice, lemon zest, milk, vanilla extract, and eggs, and mix everything together.
  • In a separate bowl, mix flour, baking powder, and salt. Slowly add this mixture into the wet bowl. Then, add 3/4 cup of blueberries and mix everything well.
  • Pour the mixture into the loaf pan and make sure it's evenly spread. Then, add the rest of the blueberries on top.
  • Bake for 45-50 minutes or until the top of the loaf is lightly browned.

To make lemon glaze

  • In a small bowl, mix together lemon juice and powdered sugar until well combined. It might take a sweet minute, but you can do it 🙂
  • Pour the mixture all over your warm blueberry loaf and enjoy!
