Oatmeal Raisin Cookies

Ingredients
  

Dry Ingredients

  • 2 1/2 cups + 2 tablespoons all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar(you can use light brown sugar as well)
  • 2 1/4 cup oatmeal(old fashioned or quick)
  • 1 tsp cinnamon
  • 1 1/2 cup raisins
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 tbsp vanilla extract
  • 1 cup butter(room temp - IMPORTANT)

Instructions
 

  • Beat eggs in bowl. Add raisins and vanilla extract. Let soak for at least 1 hour.
  • Preheat the oven to 350F
  • In a separate bowl, combine all dry ingredients: flour, salt, cinnamon, and baking soda. Set aside.
  • Using a mixer, blend the butter with both white and brown sugar until creamy.
  • Add the flour mixture to the butter mixture, using a spatula to combine. The dough will become stiff.
  • Gently fold in the raisin and egg mixture until evenly incorporated.
  • Stir in the oatmeal until well combined.
  • Form the dough into 2-3 inch balls and place them on a baking sheet. Bake for 10-12 minutes.
  • Once baked, remove from the oven and allow to cool completely.
