Cheesy Bacon Egg Muffins: A Perfect Breakfast Treat
Ingredients
- 7 eggs
- 1/4 cup egg whites
- 1 cup cottage cheese
- 1 pinch of salt and pepper
- 1 cup cheddar cheese(shredded)
- 2 tbsp parmesan cheese(shredded)
- half bell pepper(finely chopped)
- 4-5 slices cooked bacom
- dash of green onion(optional)
Instructions
- Preheat the oven to 350°F.
- In the blender add eggs and egg whites, cottage cheese, 70% of cheddar cheese, parmesan cheese, salt and pepper and blend everything together.
- After preparing the batter, make sure to either spray or coat the muffin tins with olive oil.
- Then, carefully pour the batter into each muffin cup. Fill each cup about more than half way full.
- Add a portion of finely chopped bell pepper to each muffin tin, followed by a sprinkle of bacon bits and any remaining cheddar cheese. optional – here you can also add a dash of fresh green onion.
- IMPORTANT STEP. Fill a 9×13 inch ovenproof baking pan(or any big pan) halfway with HOT water. Then, place it on the lower oven rack.
- Next, position your muffin tins on the rack above it. Bake for 20-25 minutes.
